Nectarine Strawberry Galette with Honey glaze


This galette is a perfect way to quickly make use of summer fruits you don't even have to spend time pushing pastry into a tin! just place the fruit on top, fold and bake. I have used golden caster sugar and glazed the tart with honey as these flavours pair well with nectarines.

The puff pastry makes for a flaky pastry crust and with the addition of milk and sugar the crust becomes extra golden and crunchy.

Ingredients:

2 nectarines, sliced

100g washed, hulled strawberries, halved

3tbsp plain flour

5tbsp golden caster sugar

2tbsp milk

2tbsp honey

Method:

Line a large flat baking tray with greaseproof paper.

Roll out the puff pastry into a large circle approx. 5mm thick. transfer to a baking tray.

Using a blunt knife gently score a ring in the circle 3-4cm in, then dust the plain flour in this inner circle leaving the trim.

Next place the nectarine slices fanning from the outside and working in. Then sprinkle with the halved strawberries.

Sprinkle 3tbsp of the sugar over the fruit. Then fold the pastry rim in on top of the fruit to create a pastry crust.

Brush the pastry crust with the milk and sprinkle the remaining sugar on top. this will give the crust extra crunch.

Place in the pre-heated oven to baking for 25-30 minutes until the pastry is well puffed and golden.

Remove from the oven and allow to cool slightly.

Stir together the honey with a splash of water to create a slightly runny syrup.

drizzle this syrup over the tart evenly to glaze.

Done! Serve with vanilla ice cream or custard.
