Chocolate chip cookies
These cookies are crispy on the outside, slightly soft in the middle and full of chocolate chips!
Makes 15-20 thick cookies
Ingredients:
110g softened unsalted butter
60g demarera sugar
70g caster sugar
1 egg
160g self raising flour
Pinch of salt
1tsp vanilla extract
80g chocolate chips
Method:
Pre-heat the oven to 180°C/fan 160°C/gas 4.
Line a baking tray with greaseproof paper.
Beat together the butter and sugar until light and fluffy, using a electric whisk.
Beat in the egg, vanilla extract and salt.
Then add the flour and chocolate chips and stir through until fully incorporated. The dough will be sticky.
These cookies are so delicious because they are studded with milk chocolate, so find your best quality and tasting chocolate!
I also recommend leaving a few pieces of chocolate separate for topping the spoonfulls of dough with later, this way there is plenty of chocolate inside but it can also been seen on the outside.
Place spoonfulls of the dough (about 1 1/2 tbsp each) onto the lined baking tray spaced 3-4 cm apart.
Bake in the preheated oven for 10-12 minutes until lightly golden brown and still soft in the centre.
Transfer the cookie to a wire rack to cool completely and then serve, or serve slightly warm.
